Application Importance of Titratable Acidity (TA) in Winemaking

The amount of acid present in a wine can directly affect its color and flavor, and can serve to balance the sweeter or more astringent wine components. This balance is challenging as too much acid may make a wine tart or sharp, while too little may make a wine flat or flabby. Proper acidity in wine is important to making the wine stable, palatable, and a refreshing accompaniment to food. The proper acid level of a finished wine can vary based on the wine’s desired style, with sweeter wines usually requiring somewhat higher levels of acidity to maintain proper balance with their sweeter components.

Understanding the relationship between pH and acidity is important throughout the entire winemaking process to ensure a stable, quality product. This relationship is complex since pH is the measurement of hydrogen ion activity and acidity is the concentration or buffering capacity of a particular acid. For example, adding more acid to a wine may not appreciably affect the pH because of compounds such as phenols and other acids present that act in a buffering capacity. If a pH adjustment is required, tartaric acid addition is generally preferred because it is relatively stable and is a stronger acid than malic or citric, yielding a greater pH adjustment per amount used. The complex correlation between pH and TA makes it crucial to assess both parameters before and after making any adjustments.

HI902 Potentiometric Titration System for Titratable Acidity

The HI902 is a potentiometric titration system for the measurement of Titratable Acidity (TA) and other wine parameters. This meter has many features including:


  • Can be used for YAN, SO2 (Air Oxidation and Ripper Methods), and reducing sugar titrations
  • Available with 1 or 2 analog input boards. Each board can accept ORP, pH or ISE electrodes. Having two analog board inputs allows for the simultaneous connection of two probes.
  • Available with 1 or 2 dosing pumps. A second dosing pump can be used for:
    • Second titrant for a second parameter
    • Reagent addition as part of the sample preparation
  • Exchangeable Clip Lock burettes allow for quick changing to different titrants and are available in variety of sizes up to 50 ml
  • Linear or dynamic dosing of titrant with 40,000 step burette
    • Dynamic dosing allows for larger doses in the beginning of the titration and smaller as the end point is reached
    • Accurate and precise determination of titrant used
  • Logging and USB connection for data management
  • Compatible with HI921 autosampler for users with a high throughput of samples to be measured

The HI902 is a potentiometric titration system for the measurement of Titratable Acidity (TA) and other wine parameters. This meter has many features including:

Titrants & Reagents for Application Specific Mini-Titrator

Hanna’s application specific mini-titrator for sulfur dioxide analysis uses specific titrant and reagents. The HI84500 is the second generation mini-titrator in which the dosing system was improved. The first generation, HI84100, used a peristaltic pump to deliver the titrant while the HI84500 uses a piston style dosing pump. Each titrator uses its own specific titrants.

At the heart of every pH measurement is the pH electrode. There are many considerations that are used when designing a pH electrode for a specific application.
