Volatile Acidity (VA)

Parameter Selection

Application Importance of Volatile Acidity (VA) in Winemaking

Acetic acid is commonly formed during yeast growth in the early stages of fermentation. The rate and amount of acetic acid formed is partially dependent on the pH, sugar levels, available nitrogen, and temperature of the system. Typical VA levels post-fermentation range from 0.2 - 0.4 g/L. Any level higher could indicate microbial involvement and potential spoilage.

Electrodes

HI1048 Wine Must pH Electrode

At the heart of every pH measurement is the pH electrode. There are many considerations that are used when designing a pH electrode for a specific application. With wine juice and must there is a high solids content that can lead to the clogging of the reference junction. The HI1048 wine pH electrode incorporates a PTFE sleeve that repels solids and is movable to clean the interface between the sample and the reference.

  • PTFE Sleeve Junction
  • Double Junction design
  • Refillable with 3.5M KCl
  • Glass body for fast thermo-equilibrium

Maintenance Solutions

pH Electrode Refill Solutions

Maintaining a proper filling solution level in a refillable pH electrode is critical to obtaining accurate and reliable pH measurements. The solution not only provides an electrical pathway to the internal reference but maintaining an ideal level ensures there is adequate head pressure to ensure flow through the junction into the sample.

  • Solutions for both single and double junction electrodes
    • Single junction electrodes use 3.5 M KCl with silver chloride
    • Double junction electrodes use 3.5 M KCl
  • Available in a variety of sizes

Cleaning Solutions

Maintaining a clean pH electrode is critical to obtaining accurate and reliable pH measurements. This especially true for Winemakers that measure pH in a grape juice sample that has a high content of solids from the skins and pulp of a crushed grape. Hanna offers specially formulated solution to clean the deposits and stains from a pH electrode.

Storage Solutions

All pH electrodes will have a hydrated layer from on the surface of the glass sensing membrane. Maintaining this hydrated is important from a calibration standpoint since the mV response is different from a dry electrode as compared to a hydrated one.

  • Specially formulated to keep the glass hydrated while minimizing organic growth
  • Keeps junction hydrated for fast response
  • Available in 230 and 500 ml bottles
