Application Importance of Yeast Assimilable Nitrogen (YAN) in Winemaking

Yeast Assimilable Nitrogen (YAN), also known as Formol Number, is a measurement of Nitrogen in wines. Nitrogenous compounds such as ammonia are essential to the winemaking process. A sufficient concentration of nitrogen must be present in the grape juice for healthy yeast metabolism and an efficient fermentation. Low nitrogen levels can result in slow or incomplete fermentations. When nitrogen availability is too low in wine must, yeast may undergo less efficient, undesirable fermentation pathways possibly yielding hydrogen sulfide, a compound known for its ‘rotten egg’ odor.

Typical nitrogen levels in grape must should be between 140-500 mg/L. Nitrogen can be supplemented with the use of diammonium phosphate (DAP), an Alcohol and Tobacco Tax and Trade Bureau (TTB) approved ammonium-based wine additive.

HI902 Potentiometric Titration System for YAN (Formol Number)

The HI902 is a potentiometric titration system for the measurement of Yeast Assimilable Nitrogen (YAN), also known as Formol Number, and other wine parameters. This meter has many features including:


  • Can be used for YAN, SO2 (Air Oxidation and Ripper Methods), and reducing sugar titrations
  • Available with 1 or 2 analog input boards. Each board can accept ORP, pH or ISE electrodes. Having two analog board inputs allows for the simultaneous connection of two probes.
  • Available with 1 or 2 dosing pumps. A second dosing pump can be used for:
    • Second titrant for a second parameter
    • Reagent addition as part of the sample preparation
  • Exchangeable Clip Lock burettes allow for quick changing to different titrants and are available in variety of sizes up to 50 ml
  • Linear or dynamic dosing of titrant with 40,000 step burette
    • Dynamic dosing allows for larger doses in the beginning of the titration and smaller as the end point is reached
    • Accurate and precise determination of titrant used
  • Logging and USB connection for data management

Titrants and Reagents for Application Specific Mini-Titrator

Hanna’s application specific mini-titrator for sulfur dioxide analysis uses specific titrant and reagents. The HI84533 is the second generation mini-titrator in which the dosing system was improved. The first generation, HI84133, used a peristaltic pump to deliver the titrant while the HI84533 uses a piston style dosing pump. Each titrator uses its own specific titrants.
